The Pan
You’ll need a cast-iron pan because it needs to go in the oven, but if you want perfect paella, try a paella pan.
The Base
Add oil and chicken (we use thighs) and cook until they get a little brown.
The Veggies and Rice
Add some onion and garlic, roasted red peppers, tomatoes, chopped green onion, artichoke hearts, chorizo and stir it up. Next, add a pinch of paprika, saffron, salt, and pepper- don’t skip this step! Then add the rice- a short-grain Spanish variety is best. The veggies are where you add your flair. If you like peas then add those, if not, add something else. Now mix in chicken stock and a shellfish or fish stock.
The Seafood
Mix in a tomato paste and add in your seafood of choice. We use large shrimp, calamari, clams, and muscles.
Finish It
Lastly, stick the whole pan in the oven for about 30-40 min. The rice should absorb all the liquid and voila, now you know how to make paella at home. You can pair it with your favorite Tempranillo for a perfect night in.
